Chicken and dumplings with tortilla is a hearty, soupy recipe that will warm you through and through, leaving you racing back for more. Our slow-cooked recipe (use an enameled cast iron dutch oven for slow-cooking) ensures that the chicken literally falls off the bone, while a tortilla press will give you freshly pressed, homemade tortilla dumplings to add to the broth!
6 chicken legs
2 stalks of celery, chopped
1 small onion, chopped
1 can of cream of chicken soup
2 chicken stock cubes
8 cups of water
Salt and pepper to taste
8-inch flour tortillas
Place a large saucepan or Dutch oven on the stovetop and bring 8 cups of water to the boil.
Add in your chicken and chopped veggies, and stir in your chicken stock cubes.
Add salt and pepper to taste.
Allow the ingredients to slowly simmer away on the stovetop for at least 45 minutes.
When the chicken is cooked through, and the skin is beginning to fall off, remove it from the pot.
Allow the chicken to cool before removing the skin and pulling the meat from the bones.
Cut the chicken into small chunks and leave it on the side.
Pour your cream of chicken soup into the pot of chicken broth, and once again, bring it to a rolling boil.
Now, slice up your 8-inch tortillas into thin strips, and add each strip to the boiling chicken broth.
Once you've added all of your tortilla strips, place your chicken back into the pot again.
Simmer the mixture for a further 10 min.
Continuously stir to keep the tortillas from all clumping together.
Serve your chicken and tortilla dumplings nice and hot, straight from the pot!
If you have a tortilla press, then you can also make your own homemade flour tortillas from scratch too. It's a great addition to the recipe, and they are surprisingly easy to prepare too. You just need flour, salt, water, and vegetable oil.
If you don't have a tortilla press, then you can do the entire process by hand, but it will take a lot longer, and your tortillas won't be quite as thin. You'll need a lot of energy, too, so the recipe could take a while longer to prepare!
You can serve up chicken and tortilla dumplings as a hearty, wholesome soup, and it won't need too many accompaniments at all.
You could serve it with some bread or some extra tortillas to help mop up the broth at the end of the meal. Prepare a portion of rice to go on the side. Other options include a classic side salad, or even couscous or bulgar wheat. Anything that can absorb the broth works particularly well as a side!
