Heat a spoon of olive oil in a large deep skillet over medium heat. Cook the onion for a minute or until it's translucent.
Add ground beef, chili and garlic powders, and salt. Cook the meat, stirring and breaking it continuously, for approximately 6-8 min or until it turns brown.
Add rice, diced tomatoes, black beans, and broth to the skillet. Stir everything. Then turn up the heat to the maximum setting and bring it to boil. Then reduce the heat, and cover it with a lid. (If your skillet doesn't have a lid, use foil.) Let your beef and rice casserole simmer for approximately 20 min or until the broth is absorbed and the rice is cooked.
Once cooked, stir everything once more and sprinkle with cheddar cheese.
Leave the lid on for a few more minutes so that the cheese melts. Then take the pan off the stove.
