All you need is a couple of ingredients you most likely already have in your cupboard, a few overripe bananas, a good non-stick cast iron griddle pan or a skillet, and 15min of your time.

Mix flour, sugar, baking powder, and salt. Take a separate bowl, mash bananas and mix them with a beaten egg, milk and oil. You can also add a little bit of vanilla essence if you wish.
Now slowly stir the flour mixture into your banana mixture. One tablespoon at a time and mix it well. Your batter might turn out slightly lumpy, but don't worry about it too much!
Heat a skillet or a griddle to medium-high heat and add a splash of oil. When the oil has heated up, add a scoop of batter onto the griddle. Aim for approximately 1/4 of a cup for a pancake. Cook each side for a few minutes until your banana pancake turns golden brown.
Serve while hot with your favorite toppings, like yogurt, blueberries, peanut butter, honey, or maple syrup. Enjoy!
