Black Bean Casserole Recipes

Whether you choose to make it more Mexican or keep things simple, this baked bean casserole is comfort food you can enjoy without worrying about unhealthy ingredients or worthless calories. If you want your casseroles to really soak in all of the beautiful flavors you are cooking with, we recommend using a cast iron casserole dish.
Mexican Black Bean Casserole
Ingredients
- 1 can of black beans
- 1 can of sweet corn
- 2 bell peppers (preferably different colors)
- Fresh cilantro or parsley, chopped
- 3 large corn tortillas
- 2-3 cups hard cheese, shredded
- 14 oz enchilada sauce
If you really want to make this dish your own, you can make your own enchilada sauce in about 15 min using our recipe. This enchilada sauce goes great with all sorts of recipes including original or meatless versions of Mexican enchiladas or other bean casseroles. If you end up with leftover sauce, you can safely store it in the fridge for up to 2 weeks!
Instructions
- Preheat the oven to 375°F.
- Chop the peppers. Drain the black beans and corn.
- Pour around a quarter of your enchilada sauce over the bottom of your casserole dish.
- Place 1 large tortilla in the dish and cover it with a third of the chopped peppers, beans, sweet corn, and cheese. Spread sauce evenly over it. Repeat layering 2 more times with remaining ingredients.
- Cover the casserole with a lid and bake it in the oven for 25 min.
Black Bean Rice Casserole
Ingredients
- 1 can of black beans
- 1 can of sweet corn
- 1 red bell pepper
- ¼ cup purple onion, diced
- 2 cups cooked brown rice
- 4 oz full-fat coconut milk ( can be replaced with cream cheese)
- ½ lime, juiced
- Fresh cilantro or parsley, chopped
- 1 tbs cumin
- 1 tbs smoked paprika
- 1 tbs garlic, minced
- 1 tbs chili powder
- salt/pepper to taste
Instructions
- Preheat the oven to 425°F.
- Drain and rinse the black beans and sweet corn. Chop the onion and pepper.
- Add all of the ingredients to a large mixing bowl and stir until evenly combined.
- Transfer the mixture to a casserole dish.
- Cover the casserole and bake it in the oven for 30 mins.
