Vegetarian black bean casseroles are fast and easy ways for you to spice up your weeknight menu. With so many great options for black bean casseroles out there, we could not settle on just one black bean casserole recipe so we decided to share our top TWO recipes. These recipes will save you time and money as they warm themselves into the favorite section of your recipe book. These casseroles are great low-fat family dinner options or meatless Monday meals. If you have ever looked for vegetarian recipes, you probably noticed that most vegetarian recipes are casseroles. There is a good reason for that! Casseroles are easy dinner recipes and super quick to throw together. These two recipes are no different!

To satisfy your Mexican food cravings, these two recipes will offer you the perfect opportunity to break out your tortillas or get your rice fix with a simple oven bake. Whether you choose to make it more Mexican or keep things simple, this baked bean casserole is comfort food you can enjoy without worrying about unhealthy ingredients or worthless calories. If you want your casseroles to really soak in all of the beautiful flavors you are cooking with, we recommend using a cast-iron casserole dish.

Mexican Black Bean Casserole

  • 2 bell peppers (preferably different colors)
  • Fresh cilantro or parsley, chopped
  • 3 large corn tortillas

If you end up with leftover sauce, you can safely store it in the fridge for up to 2 weeks!
