This recipe only requires a few ingredients and you most likely already have them in the fridge - ground beef, cream cheese, cheddar cheese, and spices. This casserole recipe is simple and can be adapted to various diets, especially for those looking for low carb meals or keto recipes. This meal has a very low carb count and if you use extra-lean beef or reduced-fat cream cheese, you'll end up with a great dish to add to your repertoire of healthy casseroles.
Ground Beef Casserole
Makes 8 servings
2 lb extra-lean or lean ground beef
1 tsp salt
A pinch of black pepper
2 tsp garlic powder
1 tsp onion powder
A pinch of cayenne pepper
4 oz reduced-fat cream cheese (or full-fat, if you prefer)
1 cup cheddar cheese, shredded
2 tbs fresh parsley, chopped
Preheat the oven to 400°F. Lightly spray your casserole dishwith olive oil.
Heat a large cast-iron skilletover medium-high heat and spray it with oil. Add the ground beef and cook it for approximately 5 min or until the meat is thoroughly cooked but not crispy. The ground beef needs to be stirred and broken up while it is cooking. With both the extra-lean and lean ground beef, the excess fat should be drained off as soon as the ground beef is thoroughly cooked. Keep the meat in the skillet.
Turn the heat down and stir in the spices. Season the beef to your taste.
Cut the cream cheese into cubes and slowly mix them into the ground beef. Stir the mixture until the cream cheese is fully melted and thoroughly incorporated into the meat.
Turn off the heat and add 1/2 of cheddar cheese to the mix. Once the cheddar cheese is fully mixed into the ground beef and cream cheese mixture, transfer it to your baking dish. Sprinkle the rest of the cheddar cheese over the top of your beef casserole.
Bake it in the oven for approximately 10 min, or until the cheese is melted.
Sprinkle parsley on the finished result. Serve it with your favorite roasted vegetables or green salad for a low-carb option. Alternatively, add rice or potatoes for a hearty and well-rounded meal.
