1 cup of almond flour
2 tbsp of ground flaxseed
1 1/4 tsp of xanthan gum
1/4 tsp of salt
2 large eggs
Gather the ingredients we've detailed for your keto pasta recipe.
Mix the almond flour, ground flaxseed, xanthan gum, and salt in a food processor. Pulse the ingredients until they are thoroughly combined.
Crack both of your eggs into the food processor and pulse the ingredients together again. Keep pulsing until a firm ball of dough begins to form.
Clean a kitchen countertop and lay down a large piece of parchment paper.
Place the ball of dough onto the parchment paper and knead it vigorously for around 10 min. The dough should be super soft. Add more almond flour if the dough is still too sticky, and keep kneading.
When the dough is soft, you need to use a rolling pin to flatten the ball into one long, thin sheet roughly a quarter of an inch in thickness.
Prepare your pasta roller and set it to your desired setting to produce the consistency you prefer best in your noodles.
Feed the sheet of dough through the pasta roller and repeat until you have the desired thickness.
Cut the dough into 3 equal thirds, add a little almond flour to stop it sticking. Put the pasta roller on the "fettuccine cutter" setting.
Pass each sheet through the cutter, slicing all the dough into long, fettuccine shaped low carb noodles.
Place the noodles into resealable containers, allowing them to dry out for at least 24 hours before cooking your low carb pasta!
A pasta roller makes it easy to roll out noodles of delicious, low carb pasta for a keto diet. Our keto pasta recipe is relatively simple as long as you have the right ingredients. Just in case you have further questions, we put together this quick FAQ to help you make the perfect keto pasta at home!
"Keto" is short for ketogenic, a diet high in protein and fat, but low in carbs. Some people follow the keto diet because they have certain medical conditions. Keto is an excellent option for those who need to lose weight for health reasons or looking for a fast and effective way to lose weight quickly.
A keto diet aims to train the human body to burn fat rather than use carbohydrates for fuel. This diet helps condition the body to burn existing deposits of fat and the fat in the diet, which will ultimately help a person drop more than a few pounds if they stick to it!
Traditionally, most pasta varieties use wheat flour. As a result, the pasta is incredibly high in carbohydrates. While you are allowed some carbs in a keto diet, you can't get away with regularly eating bowls of pasta, because it's not keto-friendly!
Our keto pasta recipe substitutes the wheat four for almond flour, which produces noodles with the same texture and consistency as you'd expect to find in traditional pasta. The xanthan gum acts as a binding agent, to help hold the dough together and give the keto pasta that classic pasta look and feel!
We recommend drying the pasta out for 24 hours in a resealable container at the end of our recipe. The 24-hour dry time not only allows your pasta to keep for longer but also makes it a lot easier to cook.
With dried out low carb pasta, you'll cook the noodles in boiling, salted water, the same way you would any other pasta that you buy in a packet from the store. Dried out keto pasta should take no more five minutes to cook through.
Once you've boiled the keto pasta, strain it thoroughly before you serve.
If you prepare keto pasta dough recipes for some fresh pasta dishes, you can skip the drying out stage altogether. When the pasta has been rolled and cut into shape, you bring a large saucepan of water to boil on the stovetop. Add a dash of salt, and then throw in your low carb pasta noodles.
You'll need to boil the fresh keto pasta for no longer than 2 minutes. The noodles cook quickly, so be careful that you don't overdo it.
Once the pasta has cooked through, strain it before serving!
You can store freshly rolled keto pasta in the fridge for up to 24 hours, but it will start to lose its freshness and begin to dry out. Try to cook it quickly, if you want it kept fresh.
If you're looking to store keto pasta for longer than this, we recommend drying it out straight away. You can do this over 24 hours by leaving the pasta in a resealable box on the kitchen side. We don't suggest freezing, as you'll lose a lot of the flavor and texture. Drying the keto pasta out is a much better long-term storage plan!
If you want to prepare lots of keto pasta in advance, this is easy. Just multiply the quantities of the ingredients of the low carb pasta recipes outlined earlier in this article. You can dry out lots of keto pasta, keeping it stored away in your pantry for months at a time. That way, whenever you've got those pasta cravings, you'll quickly have them beat!
A dedicated pasta roller will make your life so much easier, especially if you're planning on preparing lots of keto pasta at a time and on regular occasions. If you love your pasta, then we guarantee that you'll make use of a pasta roller!
If you don't have a pasta roller, though, then you can still prepare the recipe using the same ingredients and most of the same steps. Instead of putting the dough through the pasta roller, though, you'll need to continue rolling it flat with a rolling pin.
Rolling by hand takes a long time, so be prepared to put a little effort in if you want it flat. It's challenging to get the dough as thin as you can without using a pasta roller, so be prepared for thicker noodles.
A food processor also makes the pasta preparation a whole lot easier, but it's possible to make the recipe without one. The processor helps blend the ingredients for a smoother dough, and it helps to take a lot of the hard work out of the prep!
Without a processor, you'll need to combine all the ingredients by hand in a large mixing bowl. You'll need to beat the eggs into the flour and thoroughly mix everything. For the best consistency, you'll want to knead the dough into shape for longer, too, once it's all combined.
You'll barely notice any difference between wheat flour pasta and keto pasta when it's all smothered in tasty sauces and toppings. You can serve up any sauce you like with your delicious keto pasta!
If you're sticking to a keto diet, then you'll probably want to make sure that the sauce you serve is also keeping to the keto theme. Many Italian-style pasta sauces are already carb-free for the most part! Hot tip: Creamy sauces are higher in fat than tomato-based sauces, so keep that in mind when choosing a sauce to pair with your keto pasta.
We recommend trying out a pesto sauce, opting for a delicious marinara, or a simple tomato sauce topping. If you want to create other keto-friendly pasta dinners, like bolognese or carbonara, follow the ingredients on those dishes and use your keto pasta noodles. The options are endless!
Our keto pasta recipe is not only low carb, but it's also gluten-free. It's a great recipe to prepare if you need to keep to a gluten-free diet and are craving pasta, which is, unfortunately, gluten heavy.
You'll enjoy a keto, gluten-free alternative, which has the same great taste and texture as traditional pasta, but that is much better for your body!
Our almond flour pasta recipe is low carb, keto-friendly, and best of all, it's super delicious! This keto pasta recipe's taste and texture are comparable to traditional pasta, so stock up the cupboards with xanthan gum and almond flour to keep those pasta cravings away.
