What does "keto" mean?
"Keto" is short for ketogenic, a diet high in protein and fat, but low in carbs. Some people follow the keto diet because they have certain medical conditions. Keto is an excellent option for those who need to lose weight for health reasons or looking for a fast and effective way to lose weight quickly.

So, pasta isn't normally keto-friendly?
Traditionally, most pasta varieties use wheat flour. As a result, the pasta is incredibly high in carbohydrates. While you are allowed some carbs in a keto diet, you can't get away with regularly eating bowls of pasta, because it's not keto-friendly!

How do I cook my homemade keto pasta?
We recommend drying the pasta out for 24 hours in a resealable container at the end of our recipe. The 24-hour dry time not only allows your pasta to keep for longer but also makes it a lot easier to cook.
With dried out low carb pasta, you'll cook the noodles in boiling, salted water, the same way you would any other pasta that you buy in a packet from the store. Dried out keto pasta should take no more five minutes to cook through.
Once you've boiled the keto pasta, strain it thoroughly before you serve.
Can I cook keto pasta from fresh dough?
If you prepare keto pasta dough recipes for some fresh pasta dishes, you can skip the drying out stage altogether. When the pasta has been rolled and cut into shape, you bring a large saucepan of water to boil on the stovetop. Add a dash of salt, and then throw in your low carb pasta noodles.
You'll need to boil the fresh keto pasta for no longer than 2 minutes. The noodles cook quickly, so be careful that you don't overdo it.
Once the pasta has cooked through, strain it before serving!
Can I store keto pasta in the fridge?
You can store freshly rolled keto pasta in the fridge for up to 24 hours, but it will start to lose its freshness and begin to dry out. Try to cook it quickly, if you want it kept fresh.
If you're looking to store keto pasta for longer than this, we recommend drying it out straight away. You can do this over 24 hours by leaving the pasta in a resealable box on the kitchen side. We don't suggest freezing, as you'll lose a lot of the flavor and texture. Drying the keto pasta out is a much better long-term storage plan!
If you want to prepare lots of keto pasta in advance, this is easy. Just multiply the quantities of the ingredients of the low carb pasta recipes outlined earlier in this article. You can dry out lots of keto pasta, keeping it stored away in your pantry for months at a time. That way, whenever you've got those pasta cravings, you'll quickly have them beat!
What if I don't have a pasta roller?
A dedicated pasta roller will make your life so much easier, especially if you're planning on preparing lots of keto pasta at a time and on regular occasions. If you love your pasta, then we guarantee that you'll make use of a pasta roller!
If you don't have a pasta roller, though, then you can still prepare the recipe using the same ingredients and most of the same steps. Instead of putting the dough through the pasta roller, though, you'll need to continue rolling it flat with a rolling pin.
Rolling by hand takes a long time, so be prepared to put a little effort in if you want it flat. It's challenging to get the dough as thin as you can without using a pasta roller, so be prepared for thicker noodles.
What if I don't have a food processor?
A food processor also makes the pasta preparation a whole lot easier, but it's possible to make the recipe without one. The processor helps blend the ingredients for a smoother dough, and it helps to take a lot of the hard work out of the prep!
Without a processor, you'll need to combine all the ingredients by hand in a large mixing bowl. You'll need to beat the eggs into the flour and thoroughly mix everything. For the best consistency, you'll want to knead the dough into shape for longer, too, once it's all combined.
What sauce should I serve with my keto pasta?
You'll barely notice any difference between wheat flour pasta and keto pasta when it's all smothered in tasty sauces and toppings. You can serve up any sauce you like with your delicious keto pasta!
If you're sticking to a keto diet, then you'll probably want to make sure that the sauce you serve is also keeping to the keto theme.
