Keto Pasta Recipe: Delicious AND Low Carb!
1 cup of almond flour
2 tbsp of ground flaxseed
1 1/4 tsp of xanthan gum
1/4 tsp of salt
2 large eggs
Gather the ingredients we've detailed for your keto pasta recipe.
Mix the almond flour, ground flaxseed, xanthan gum, and salt in a food processor. Pulse the ingredients until they are thoroughly combined.
Crack both of your eggs into the food processor and pulse the ingredients together again. Keep pulsing until a firm ball of dough begins to form.
Clean a kitchen countertop and lay down a large piece of parchment paper.
Place the ball of dough onto the parchment paper and knead it vigorously for around 10 min. The dough should be super soft. Add more almond flour if the dough is still too sticky, and keep kneading.
When the dough is soft, you need to use a rolling pin to flatten the ball into one long, thin sheet roughly a quarter of an inch in thickness.
Prepare your pasta roller and set it to your desired setting to produce the consistency you prefer best in your noodles.
Feed the sheet of dough through the pasta roller and repeat until you have the desired thickness.
Cut the dough into 3 equal thirds, add a little almond flour to stop it sticking. Put the pasta roller on the "fettuccine cutter" setting.
Pass each sheet through the cutter, slicing all the dough into long, fettuccine shaped low carb noodles.
Place the noodles into resealable containers, allowing them to dry out for at least 24 hours before cooking your low carb pasta!

With dried out low carb pasta, you'll cook the noodles in boiling, salted water, the same way you would any other pasta that you buy in a packet from the store. Dried out keto pasta should take no more five minutes to cook through.
Once you've boiled the keto pasta, strain it thoroughly before you serve.
Can I cook keto pasta from fresh dough?
If you prepare keto pasta dough recipes for some fresh pasta dishes, you can skip the drying out stage altogether. When the pasta has been rolled and cut into shape, you bring a large saucepan of water to boil on the stovetop. Add a dash of salt, and then throw in your low carb pasta noodles.
You'll need to boil the fresh keto pasta for no longer than 2 minutes. The noodles cook quickly, so be careful that you don't overdo it.
