Tacos are always a great idea if you are looking for a tasty, quick and easy midweek dinner. What's even better? Shrimp tacos. Juicy and spicy, a source of protein and prepared in a matter of minutes. Add to the mix a shrimp taco sauce and healthy coleslaw and you'll have a mouthwatering meal. Follow this simple shrimp taco recipe for a simple yet tasty dinner.
How to make shrimp tacos
Makes 6 to 8 tacos
For the shrimp tacos
1 pound peeled large shrimp
1 tbs extra-virgin olive oil
1 tsp chili powder
1 tsp ground chipotle chili
1 tsp ground cumin
A pinch of salt
6 to 8 flour or corn tortillas
Other garnishes of your choice (avocados, cilantro, sour cream, lime wedges)
For the shrimp taco sauce and coleslaw
1 cup nonfat plain Greek yogurt
2 tbs extra-virgin olive oil
1 garlic clove
1/2 small jalapeno
1/4 cup fresh cilantro
A pinch of salt
1 large lime (zest and juice)
2 cups of shredded cabbage
Choose your shrimps. You can use fresh shrimps or their frozen alternative. Frozen shrimp isn't recommended if you are eating something like a shrimp cocktail, however, frozen will do just fine if you're preparing it with spices and fresh ingredients like garlic. They are usually slightly cheaper and are already peeled so ready to be sauteed, meaning you can reduce your prep time even more.
If you're using frozen shrimp, thaw it in the refrigerator overnight, or if you do forget it (no judgment here!) you can fast forward the process by putting frozen shrimps in a colander and submerging it into cold water for 20min. Don't use hot water as it will ruin your shrimps. They cook very quickly so using hot water means that they'll start cooking from the outside and will stay frozen from the inside. No one wants that.
Once your shrimp is ready, rinse it and pat dry. Drizzle it with a little bit of oil and sprinkle with spices. Toss everything gently to coat shrimps evenly. Let it sit while you prepare shrimp taco sauce and slaw.
Shred the cabbage. Then add Greek yogurt, olive oil, cilantro, garlic, jalapeno, lime zest, and lime juice into a food processor. Blend it, add salt depending on your taste. Mix half of the sauce with the slaw and keep the rest for your tacos.
Time to cook the shrimps! Heat a cast iron skilletto medium-high heat and add a splash of oil. Add the shrimp and cook it until it's no longer translucent. Cooking perfect shrimps might take a bit of practice, but the secret here is not to overcook them. Otherwise, the shrimp will shrink and will become too chewy.
Cook time shouldn't be any longer than 4min. Once you're done, transfer the shrimp to a plate. Don't leave them cooking in the skillet as they will overcook.
Warm flour tortillas before serving if desired. You can stick them in the oven heated to 250°F, or place them in a microwave. It will take only a couple of minutes no matter the method. If you want to go an extra mile, make homemade corn tortillas. It will only take 10min and you can prepare them beforehand.
Serve your shrimp tacos! Fill tortillas with slaw, add shrimp, extra sauce and lime juice if desired.
