1 lb large shrimp, peeled
6-8 flour or corn tortillas
2 cups of shredded cabbage
1 cup nonfat plain Greek yogurt
1/4 cup fresh cilantro
1/2 small jalapeño
1 large lime (zest and juice)
1 garlic clove
3 tbsp extra-virgin olive oil
1 tsp chili powder
1 tsp ground Chipotle chili
1 tsp ground cumin
Other garnishes of your choice (avocados, cilantro, sour cream, lime wedges)
Rinse your shrimp and pat dry. Drizzle with a little bit of oil and sprinkle with spices. Toss everything gently to coat shrimps evenly. Set aside while you prepare shrimp taco sauce and slaw.
Shred the cabbage. Then add Greek yogurt, olive oil, cilantro, garlic, jalapeño, lime zest, and lime juice into a food processor.
Blend the mixture and add salt depending on your taste. Mix half of the sauce with the slaw and keep the rest for your tacos.
Heat a cast iron skillet to medium-high heat and add a splash of olive oil.
Add the shrimp and cook it until it's no longer translucent. It should take around 4 min. Once done, transfer the shrimp to a plate.
Warm flour tortillas before serving if desired. You can stick them in the oven heated to 250°F, or place them in a microwave. It will take only a couple of minutes no matter the method. If you want to go an extra mile, make homemade corn tortillas. It will only take 10 min and you can prepare them beforehand.
Fill tortillas with slaw, shrimp, extra sauce, and lime juice, if desired.

Frozen shrimp isn't recommended if you are eating something like shrimp cocktail. However, frozen will do just fine fr shrimp tacos if you're preparing it with spices and fresh ingredients like garlic. They are usually slightly cheaper and are already peeled and ready to be sauteed. This can reduce your prep time even more.
If you're using frozen shrimp for this shrimp tacos recipe, thaw it in the refrigerator overnight. If you do forget to do so (no judgement here!) you can fast forward the process by putting frozen shrimps in a colander and submerging it into cold water for 20 min.
Don't use hot water as it will ruin your shrimps. They cook very quickly so using hot water means that they'll start cooking from the outside and will stay frozen from the inside. No one wants that in their shrimp tacos.
Cooking perfect shrimps might take a bit of practice, but the secret here is not to overcook them. Otherwise, the shrimp will shrink and will become too chewy.
